I love this recipe because it’s made with ingredients that you probably already have lying around your house.
- 1 Egg
- 1 Ripe Banana. I only use half for the toast and serve the other half on the side.

- Star Cookie Cutter. I found these on amazon, but there are plenty of options to choose from online.

My toddler always wakes up hangry so having this quick and healthy recipe in my back pocket is a life saver! Now let’s get into the super easy steps to make this 3 ingredient eggy banana toast for your toddler.
- On a small plate, mash half of a banana with a fork until smooth(ish). It’s okay to leave some chunks.
- Crack one egg on top of the mashed banana and gently whisk together until combined.
- Coat the bread. Lay one slice of bread on the plate with the mixture and let sit for 10ish seconds. Using a fork, flip the bread over to coat the other side.
- Heat a skillet to medium and add olive oil. Add the soaked bread to the pan and cook for 2-3 minutes on each side, until golden brown.
- Plating recommendations. Your eggy banana toast is ready to eat BUT I highly recommend using a fun cookie cutter shape to cut the toast for your toddler. My toddler can’t be bothered to sit and eat for more than 2 minutes but he LOVES when his food is in fun shapes.
