Microwave Sweet Potato Recipe

Want to incorporate sweet potatoes into your weeknight meals but don’t have time to fire up your oven? I got you! In this step by step guide, I’ll teach you how to cook a sweet potato in the microwave. All you need is 7 minutes for the perfect sweet potato every time!

Sweet potatoes are chock full of antioxidants and are rich in vitamin A, vitamin C, potassium, fiber, and zinc. They have such an incredible natural sweetness and flavor that they don’t need to be dressed up – they are the main character! You can use this recipe as a side dish or to incorporate in several different sweet potato dishes. Now let’s get into how to make this easy microwave sweet potato!

What You’ll Need

  • 1 12 oz Sweet Potato (try to pick one that is evenly shaped)
  • 1 Paper Towel
  • 1 Fork
  • Microwave

Sweet Potato Microwave Cooking Instructions

  1. Step 1: Wash and dry the sweet potato. I like to use a paper towel to dry the sweet potato and save it for a later step.
  2. Step 2: Pierce the sweet potato all over with a fork.
  3. Step 3: Put the potato in the microwave either on a plate or on the paper towel that you used to dry it with.
  4. Step 4: Microwave for 4 minutes.
  5. Step 5: Using tongs (or your fingers if you’re brave), flip the sweet potato over and continue to microwave for 3 more minutes (until fork tender).
  6. Step 6: If it still isn’t fork tender, keep microwaving in 30 second increments until ready. At this stage, I like to give the sweet potato a little squeeze to see if it’s ready. If the potato is still firm it needs more time. *If your sweet potato is smaller, I recommend taking 1 minute off of the initial cooking time.

Serving Suggestions

I like to serve this microwave sweet potato as a simple side dish or on top of my favorite salad. I’ll either leave it in the skin or score the inside and scoop the potato onto a dish.  You can also mash the inside and serve as a baked potato with your favorite toppings!

Enjoy!

With this quick and easy microwave sweet potato recipe, you’ll be ready to serve up a tasty dish  in 7 minutes! Enjoy the naturally sweet flavors on its own or alongside your favorite protein. Let me know in the comments if you’ve tried this recipe or have any questions!
