On a small plate, mash half of a banana with a fork until smooth(ish). It’s okay to leave some chunks.
Crack one egg on top of the mashed banana and gently whisk together until combined.
Coat the bread. Lay one slice of bread on the plate with the mixture and let sit for 10ish seconds. Using a fork, flip the bread over to coat the other side.
Heat a skillet to medium and add olive oil. Add the soaked bread to the pan and cook for 2-3 minutes on each side, until golden brown.
Plating recommendations. Your eggy banana toast is ready to eat BUT I highly recommend using a fun cookie cutter shape to cut the toast for your toddler.
