Peel, core, and cut apples into chunks.
Place apple pieces, cinnamon sticks and lemon peel into the instant pot.
Juice the lemon over the pot and pour in the water.
Seal the instant pot and set to high pressure for 8 minutes. Let the pressure release naturally.
Remove the cinnamon sticks and lemon peel. Use immersion blender to puree or transfer into a standard blender.
